wedding shower cupcakes

So after the craziness of all those cakes Saturday- I had agreed also to making three dozen alcoholic cupcakes for a wedding shower on Sunday.  So Sunday morning I found myself up early, in the kitchen, mixing alcohol with batters and icing.  What came out of the mix:  Margarita cuppies with margarita icing, Amaretto cupcakes with almond buttercream and Bailey's Irish Cream cuppies with Bailey's frosting.  Add some pink ribbons and top with fondant medallions and DONE!  So, now it is Monday and I am getting started on the Pittsburg Junior High birthday cake for September faculty birthdays.  I have nothing slated for this next weekend but still have ALOT to do for upcoming cakes.....so this girl is getting back to the kitchen!

2 wedding cakes, 1 50th wedding anniversary cake, 1 grooms cake and I forgot my camera....again. argh.

 Thursday night -late after 12 hours of cake making/stacking-note the wine bottle getting opened.......
 The wedding cakes- the one in the back will end up with hand-painted sugar butterflies on it.  Hopefully I will get some pictures (read below)
So, I am certifiably insane. I knew this- but now, everyone has proof.  I would say photographic proof- but, I forgot my camera again.  For the third time.  During a delivery.  Or should I say, Deliveries.  Plural.  I insanely agreed to 2 wedding cakes, 1 anniversary cake and a grooms cake (stacked cheesecakes) With an additional cheesecake just in case to be back in the kitchen.  3 deliveries.  The farthest one---1 and a half hours away.  Yep.  Insane.    Did she do it?  Yes.  Does she have a tic and more gray hair?  Yes.  To top it off Ray (hubby) is out of town at a motorcycle competition with his custom-built chopper (he got first place - again- yay!) and so my 20 year old boy came to help with deliveries.  He is a sweet boy ($10 an hour Makes him Sweet).  But. about a half hour away from the house, the SUV loaded down with cakes (and the air conditioning on high) I realized that I forgot my camera.  The one that I placed Right Next to the Door so I wouldn't forget it again.  Did I mention this is the Third Time I have forgotten it?  So, once I get to the venue, and finish assembling Said Cakes. I have no pictures. *Big Sigh.  So then comes the tracking down of anyone that may have a camera and looks nice enough to take some pictures and send them to me.  Insert Nice Smiles and a Little bit of Groveling.  So hopefully I will get some good pictures.  Bit, here are some just to get a feel for the Crazy.

National Cupcake Week is next week! yay!



So next week is National Cupcake Week (or so my daughter says, and I guess I will have to trust her on that until I find out otherwise).  Of course, this is the child that forged my signature when she was in 5th grade so how trustworthy is she really.....? hm.  These cuppies were for two clients that had their birthdays this week-and they work together. I went into their business yesterday and since they were ordering things (cupcakes and art) in secret for each other I had to try to keep on the down low and try to talk to everyone about everything without the other knowing it. Ex-hausting!  But it worked out and I (the one with the glass face- I can NEVER play poker) pulled it off and made the delivery today.  All were chocolate but to change it up, I put cream cheese frosting, buttercream (the pink ones) and chocolate frosting on them.  I Love cupcakes.  And by the way, Happy National Cupcake Week next week y'all!

Birthday cake for Pam

Lindsey baked it for her mom (Italian cream cake).  She also made the cream cheese icing.  And we made the sugar roses together but mine are in the back because hers were WAY prettier! I will have to practice mine!

The perfect cake recipe!


The Perfect Cake!
Make sure to read the instructions on this cake.
Ingredients
2 cups flour
1 stick of butter
1 cup of water
1 tsp baking powder
1 cup of sugar
1 tsp salt
1 cup of brown sugar
Lemon juice
4 large eggs
Selection of nuts
2 bottles of wine
2 cups of dried fruit
Directions
Sample the wine to check the quality. Take a large bowl, check the wine again. To be sure it is of the highest quality, pour one cup and drink. Repeat! Turn on the electric mixer. Beat one cup of butter in a large fluffy bowl. Add one teaspoon of sugar. Beat again. At this point it’s best to make sure the wine is still OK. Try another cup…just in case. Turn off the mixerer thingy. Break 2 eggs and add to the bowl and chuck in the cup of dried fruit.
Pick the frigging fruit up off the floor. Mix on the turner... if the fried druit gets stuck in the beaterers just pry it loose with a drewscriver. Sample the wine to check for tonsisticity. Next, sift two cups of salt. Or something. Check the wine. Now shift the lemon juice and strain your nuts. Add one table. Add a spoon of sugar, or some fink. Whatever you can find. Greash the oven. Turn the cake tin 360 degrees and try not to fall over. Don’t forget to beat off the turner. Finally, throw the bowl through the window. Finish the wine and wipe counter with the cat.
Then finally go to Walmart and buy cake!
